Cocoa Biscotti

Ingredients
1 package Simply Organic Cocoa Brownie Mix
2  eggs
3/4 cup rice flour
Directions
Preheat oven to 300 degrees.

Combine Simply Organic Cocoa Brownie Mix, eggs and rice flour in mixing bowl. Mix well. Knead mixture as you would bread; add 1 to 2 tablespoons water, if needed, to bind dough. (Dough shouldn't stick to the working surface or your hands.)

Roll kneaded dough into a log approximately 3" wide and 6" long. Place on lightly greased cookie sheet and bake 30 minutes.

Let cool to touch, and then slice like bread (3/4" thick). Separate slices on cookie sheet, place on side and bake for 10 more minutes per side or until desired texture is reached. (Biscotti are typically very hard cookies.)
Chef Suggestions
Add 1 to 2 teaspoons Simply Organic peppermint flavor. Sprinkle still-hot biscotti with powdered sugar, or dip cooled biscotti in melted dark or white chocolate, or drizzle melted chocolate over the top.
