Did you Know?

The term "vegan," which combines the first three and last two letters of vegetarian ("the beginning and end of vegetarian"), was coined by Donald Watson in 1944. While Dr. Watson and Elsie Shrigley founded the original Vegan Society, the first U.S. Vegan Society was founded in 1948 (in California) by Catherine Nimmo and Rubin Abramowitz. It was subsequently incorporated into the American Vegan Society after its founding in 1960 by Jay Dinshah.

Vegan Cocoa Brownies
Vegan Cocoa Brownies

Ingredients
1 package Simply Organic Cocoa Brownie Mix
1/4 cup soy butter
 Powdered egg replacer equivalent to 2 eggs
Directions
Preheat oven to 350 degrees. Lightly grease an 8x8-inch pan.

In a large mixing bowl, combine Cocoa Brownie Mix, soy butter and reconstituted egg replacer. Stir until evenly moist.

Spread mixture evenly into the pan. Bake 25 to 30 minutes, or until center tests done with fork or toothpick.
Chef Suggestions
Works with most powdered egg replacement brands on the market.

For a thinner brownie, you can also make recipe in an 11X7-inch pan.

For sweet-tooth satisfaction, top cooled brownies with chocolate frosting, or dust with powdered sugar. For more chocolaty richness, add 1 cup mini chocolate chips.
