Chicken A L'Orange

Chicken A L'Orange, or chicken in orange sauce, is a classic French recipe that sounds very fancy, but it's easy to make and delicious to serve. This recipe was originally made with duck. The sweet tart flavor of the orange helps cut through the richness of the duck's flavor. Chicken is much milder, but the combination of chicken and orange is wonderful.

Ingredients
1  (3-pound) chicken, cut up into serving pieces
1/4 cup orange juice
1/4 cup flour
1 teaspoon orange zest
1/2 teaspoon salt
1/8 teaspoon white pepper
2 tablespoons butter
1 tablespoon olive oil
1  onion, chopped
1 tablespoon grated ginger root
2 cloves garlic, minced
1/2 cup orange juice
2 tablespoons honey
2 tablespoons lemon juice
1 cup chicken broth or broth made from chicken flavored broth powder
1 tablespoon minced fresh rosemary
Directions
Rinse chicken and pat dry. Dip chicken in 1/4 cup orange juice; let stand 10 minutes. Mix flour, zest, salt and pepper; dredge chicken.

Melt butter and olive oil in large pan; brown chicken; remove. Add onion, ginger and garlic, cook 4 minutes. Return chicken to pan.

Mix 1/2 cup orange juice, honey, lemon juice, broth and rosemary. Pour over chicken. Cover and simmer for 30 to 40 minutes until chicken registers 170 degrees.

You can marinate chicken in the orange juice up to 8 hours in the refrigerator for a more intense flavor.

Make sure to mix the orange zest in the flour mixture very well so it is evenly distributed.
Chef Suggestions
You can make this dish using bone-in chicken or chicken breasts.

This recipe can easily be doubled or tripled; just use 2 to 3 whole, cut-up chickens.
