Black Bean & Cheese Quesadillas
All hungry hombres, whether vegetarian or carnivore, will find this savory seasoned bean quesadilla creates a delicious and hearty meal.
1 can (15 ounces) no salt added black beans
3/4 cup chopped fresh tomato
1 package
Simply Organic Black Bean Seasoning Mix 6 tortillas (7-8 inches each)
3/4 cup shredded Cheddar Jack cheese
Combine beans, tomatoes, and Black Bean Seasoning Mix in a small saucepan. Place over medium heat until thoroughly warmed, stirring occasionally. Gently mash to break up beans. Divide mixture evenly and spread to cover half of each tortilla. Top with cheese. Fold tortilla over to enclose filling.
Heat large skillet sprayed with cooking spray on medium heat. Add quesadillas, 2 at a time; cook 4 to 5 minutes on each side or until lightly browned on both sides. Repeat with remaining quesadillas. Cut each quesadilla into 2 wedges to serve.
