Harvest Time Slaw
This prize-winning slaw combines all the goodness of fall harvests with a pinch of ginger for a holiday kick.
6 cups red cabbage, shredded
2 cups frisée, chopped (i.e. chicory or curly endive)
1/4 cup onion, chopped
1/4 cup fennel, chopped
1/4 cup olive oil
1/4 cup plain yogurt
2 tablespoons lime juice
1/2 teaspoon lime zest
2 tablespoons sweet chili sauce
1 tablespoon
poppy seeds
1/4 cup cream cheese
1/4 cup semi-soft goat cheese
1 tablespoon
crystallized ginger, diced
2 tablespoons pumpkin seeds
1/2 teaspoon
ginger root powder Slaw
In a large bowl, combine cabbage, frisée, onion, and fennel. Set aside.
Vinaigrette
Whisk together olive oil, yogurt, lime juice, lime zest, sweet chili sauce and poppy seeds until mixture is emulsified. Add the vinaigrette to the slaw and let sit for 30 minutes.
Crumble
Combine cream cheese, goat cheese, crystallized ginger, pumpkin seeds, and ginger until ginger is evenly incorporated into the mixture.
Mix half of the crumble in the slaw and serve the slaw on a platter with the remaining crumble on the top of the slaw.
Serve as a side with holiday ham; the red cabbage adds a festive flair.
