1 large soy sausage (Italian style), finely diced
olive oil for frying
1 small onion, finely diced
1/4 teaspoon
paprika 1/4 teaspoon
turmeric 1 1/2 cups cooked noodles, chopped into 1/2-inch pieces
1/2 pound fresh spinach, washed and drained
Parmesan cheese to top, optional
salt to taste
In a large skillet, fry the diced soysage in a small amount of olive oil until browned. Set aside.
Fry the diced onion in a small amount of olive oil. When starting to brown, add the spices. Cook until well browned and some pieces are starting to crisp. Add the noodles and cook until hot. Combine with the set aside soysage.
Cook the spinach just until wilted. Do not overcook; it should still be bright green. Combine with the rest of the cooked ingredients. Heat until dish is hot. Sprinkle with Parmesan cheese (if using). Taste and add salt if needed. Serve immediately.
