Gingerbread Pancakes
My kids like their pancakes in different shapes. Gingerbread men-shaped pancakes are always a hit with this batter.
1 1/4 cups flour
1 cup wheat flour
2 tablespoons brown sugar
1 1/2 teaspoons
baking powder 1 1/2 teaspoons
baking soda 1 teaspoon
cinnamon, ground 1 tablespoon
ground nutmeg 1 tablespoon
ginger 1/2 teaspoon
ground cloves 1/2 teaspoon
salt 2 cups 2% buttermilk
1/4 cup molasses
2 egg whites
In a wide-mouth pitcher or large mixing bowl, combine the flours, brown sugar, baking powder, baking soda, cinnamon, nutmeg, ginger, cloves, and salt.
In a small bowl, whisk together the buttermilk, molasses, and egg whites. Stir into the flour mix just until moistened.
Coat a nonstick griddle or large skillet with nonstick spray and heat over medium heat. For each pancake, pour or ladle about 1/4 cup batter onto the hot griddle. Cook for 1-2 minutes, or until the pancakes are bubbly and slightly dry around the edges. Turn over and cook briefly until golden. Serve immediately.
Top with a fruit sauce, like apple or pear.
