Banana Bread with Coriander
1 stick of margarine
1 cup
sugar 3 eggs
3 ripe bananas
2 cups all-purpose flour
1 teaspoon
baking soda 1 teaspoon
baking powder 1/2 cup walnuts
1/4 cup
coriander seeds 1/4 teaspoon
vanilla 1 teaspoon
cinnamon Preheat oven to 350 degrees.
Cream margarine and sugar. Add eggs one at a time and beat until fluffy, then add the bananas- these may be very ripe. Sift together flour, baking soda, and baking powder. Combine the two mixtures and add walnuts, coriander seeds, vanilla and cinnamon. Place mixture in tin, and bake for 55 minutes to 1 hour, or until toothpick inserted in center comes out clean.
Let bread cool in the pan for 30 minutes and then remove. Cool completely before cutting.
This bread is even better the second day!
As prepared, each serving contains 160 calories, 8g total fat, 30mg cholesterol, 150mg sodium, 22g total carbohydrate and 3g protein.
