Tempeh Sloppy Joes with a Twist
2 tablespoons sunflower oil
1/2 medium onion, chopped
1 to 2 cloves garlic, minced
1 green pepper, chopped
1 pound tempeh (2 packages)
1/4 cup tomato ketchup
1 cup canned tomato
2 tablespoons sorghum
2 tablespoons apple cider vinegar
1 tablespoon
paprika 1 tablespoon
dried basil or
oregano 1 teaspoon
chili powder 1/2 teaspoon
sea salt cayenne, to taste
Sauté onions for 3 or 4 minutes on medium heat and add garlic, sauté another 2 or 3 minutes and add tempeh.Sauté until nicely browned. Add green pepper and sauté a couple more minutes. Add all other ingredients and simmer for 10 minutes or so, adding water if necessary to keep moist. Check for salt.
As prepared, each serving contains 360 calories, 20g total fat, 0mg cholesterol, 800mg sodium, 28g total carbohydrate and 24g protein.
