Spicy Roasted Chickpeas
2 cups canned chickpeas, rinsed and drained
1 1/2 teaspoons extra-virgin olive oil
1/2 teaspoon
ground cumin 1/2 teaspoon
ground coriander 1/4 teaspoon
ground red pepper 1/4 teaspoon
ground black pepper Preheat the oven to 400 degrees. Coat a no-stick baking sheet with no-stick spray and set aside.
In a small bowl, toss the chickpeas with the oil, cumin, coriander, red pepper and black pepper.
Place the chickpeas in a single layer on the prepared baking sheet. Bake for 30 to 40 minutes, or until crisp and golden.
Variations:
Southwestern Roasted Chickpeas: Replace the coriander with chili powder.
Cajun Roasted Chickpeas: Replace the cumin, coriander, red pepper and black pepper with 1 teaspoon Cajun Spice.
