In Italian, the word "biscotti" is the plural form of "biscotto", referring to any type of biscuit (cookie). It originates from the medieval Latin word biscoctus, meaning "twice-cooked/baked". Originally, the biscuits were baked twice in the oven so they could be stored for long periods of time, which was of particular use during journeys and wars. It is purported that a commander of the Roman Army boasted biscotti would be edible for centuries.
