Lemon Poppy Seed Cake
Cook up a special cake in less than an hour with this tasty recipe.
1 1/4 cups all-purpose flour
2/3 cup
sugar 1/2 cup
cornstarch 1 tablespoon
whole poppy seed 2 1/4 teaspoons
baking powder 1 teaspoon
salt 2 tablespoons unsalted butter
1 cup skim milk
2 teaspoons
lemon zest 1 1/2 teaspoons
vanilla extract 1 large egg
Preheat oven to 350 degrees.
Grease and flour an 8-inch baking pan. Combine first 6 ingredients in a bowl. Using a fork, blend in butter until incorporated. Combine remaining ingredients in another bowl. Stir milk mixture into flour mixture until just blended. Pour batter into prepared pan.
Bake 35 minutes, or until a tester comes out clean when inserted in center. Remove from pan and cool on a rack.
As prepared, each serving contains 190 calories, 4g total fat, 35mg cholesterol, 450mg sodium, 35g total carbohydrate and 4g protein.
