Southwest Seafood Salad

1/4 cup vegetable oil
4 teaspoons vinegar
1 package Simply Organic Salsa Verde Seasoning Mix
8 ounces pre-cooked seafood (shrimp, scallops, etc.)
9 ounces fresh mixed greens
1/2 cup cooked black beans
1/4 cup salsa
1/2 cup shredded cheese
In a small bowl, combine vegetable oil, vinegar, and seasoning mix. Place seafood in a ziplocking bag.

Add seasoning mixture. Seal bag and shake to evenly coat seafood. Refrigerate for 1 hour.

Toss mixed greens with salsa, black beans, and shredded cheese. Arrange on 3 plates. Remove seafood from marinade mixture. Garnish each salad with the seafood.
