Spice and Cream Mini Cakes
Ingredients
1 package Simply Organic Pumpkin Cake Mix
2 eggs
1/2 cup light sour cream
1/4 cup water

Directions
Preheat oven to 350 degrees. Lightly grease a 12-count muffin pan or use muffin papers.
In a medium-sized mixing bowl, add all ingredients and mix well. Pour into muffin pan and bake 25 to 30 minutes or until center tests done with a toothpick or knife. Do not underbake.
