Right-side Up Fruit Cake
Ingredients
1 package Simply Organic Cranberry Bread Mix
1/2 cup rolled oats
2 eggs
1/2 cup water
1 can (15-ounces) sliced and drained pineapple

Directions
Preheat oven to 350 degrees.
In a medium mixing bowl, combine Bread Mix and oats. Add eggs and water. Stir until moistened.
Pour into a lightly greased 11x7-inch baking pan. Arrange pineapple slices on top of batter.
Bake for 25 to 30 minutes or until center tests done with a toothpick or knife.

You can use the drained pineapple juice from the can instead of water. If there is not a complete cup, add water to make the 1 cup required.
