Comfort Chicken

A common comfort food is chicken -- chicken soup, chicken and dumplings, fried chicken -- chicken seems to be a universal soother. Add mashed potatoes, and your blues may subside, at least for a night. Here's an easy, flavorful version. Martha Frankel, author of Hats and Eyeglasses, a memoir about a life-long love affair with poker, shares her favorite easy chicken recipe.

4  boneless chicken breast halves, 5 to 6 ounces each, pounded to 1/2 inch thickness
3/4 cup flour
1 teaspoon ground cumin
2 teaspoons garlic powder
1 teaspoon chili powder
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup olive oil
Put all dry ingredients in plastic bag, shake to mix.
Add chicken breasts, seal bag, and shake until all pieces are coated.

Pour olive oil in pan, heat to medium-high.
Sauté chicken breasts until browned (about 5 minutes for first side, 3 for second).
