Coconut Milk
Coconut is a must for curries, sauces, and desserts. Unsweeted coconut is sold at health food stores, food co-ops, and some large supermarkets. If you don't have time to make your own coconut milk, use canned coconut milk instead.
Ingredients
2 cups unsweetened dried coconut
3 cups boiling water
3 cups boiling water
Directions
Put coconut into electric blender. Pour boiling water over coconut. Cover blender. Blend at medium speed for 30 seconds.
Place a fine sieve over a medium bowl. Pour coconut mixture over sieve. Press coconut with a large spoon to squeeze out all milk.
Chill any leftover coconut milk and use it within three days.
