Cardamom-Flavored Chicken

Cardamom is a warming spice, and this recipe is wonderful in the winter. Ground cardamom is readily available, but buy small amounts at a time as it loses the flavor quite quickly. Better to buy whole pods, which are longer lasting, and grind the seeds as needed. Cardamom is used in many sweets as well, and is therefore a versatile spice for your pantry.

3 tablespoons sunflower oil
1 teaspoon ground {cardamom}
1 1/4 pounds boneless chicken, cubed
 {salt}, to taste
1 teaspoon chili powder
1 teaspoon turmeric
2 teaspoons tomato paste
2/3 cup plain yogurt
Heat the oil and lightly fry all but a pinch of the ground cardamom.

Add the chicken and the salt, and stir until the meat is sealed on all sides.

Tip in the spices and tomato paste and mix well.

Pour in the yogurt and 2/3 cup of water. Bring to a boil, reduce to low heat, and cook until the chicken is tender.

Serve hot, sprinkled with the reserved cardamom, with rice or rotis.
