Tomato Basil Spinach Omelet

8 ounces fresh spinach leaves
12  large eggs
1 package Simply Organic Tomato Basil Spaghetti Sauce Mix
3 to 4 ounces shredded mozzarella cheese
Lightly sauté spinach in a large skillet over medium heat until wilted.

In a mixing bowl, whisk the eggs and Sauce Mix together.

Pour over spinach and cook until eggs are done. Sprinkle cheese on top and serve immediately.
