Surprise Sour Cream Pudding
Ingredients
2 tablespoons butter
1/2 cup granulated {sugar}
1 teaspoon vanilla extract
1 egg, beaten
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/8 teaspoon salt
1 cup whole milk
2 cups brown sugar
2 cups sour cream
heavy cream for serving

Directions
Preheat the oven to 375 degrees. Butter a deep baking dish.
Cream the butter and sugar; add the vanilla and egg. Sift together the flour, baking powder, and salt. Add the dry ingredients alternately with the milk, beating thoroughly after each addition. Arrange in the baking dish. Sprinkle the top with the brown sugar, and spoon sour cream over all.
Bake for 30 to 40 minutes, or until the batter rises to the top and the cream and sugar form a caramel sauce. Invert into another deep dish for serving.
