Ham and Broccoli Roll Ups with Mustard Sauce

A great way to get your family to eat a healthy veggie!

Ingredients
6 spears fresh broccoli, cooked al dente and drained
6 slices thin deli-Swiss cheese
6 slices thin deli-ham
1 tablespoon butter
2 tablespoons flour
2 teaspoons Dijon-style mustard
1 1/2 cups milk
 {salt}, to taste
 {white pepper}, to taste
1/4 cup grated Parmesan cheese
 paprika
 Cooked rice or rice pilaf, at serving time
Directions
Roll a slice of Swiss cheese around each cooked broccoli spear. Then roll each with a slice of ham. Set aside.

In your skillet, on medium heat setting, make a roux (i.e. thickening paste for your sauce) by first melting the butter and then adding in the flour, stirring with a whisk. Gently blend in mustard and milk, stirring to mix. Stir and cook until the sauce thickens and is heated through. Lightly season with salt and white pepper. Blend in grated Parmesan.

Add roll-ups to sauce. Sprinkle with a dusting of paprika. Cover and gently simmer till all is heated through.
