Garlicky Edamame Hummus

Garnish this bright green, good-for-you dip with a drizzle of olive oil, a splash of fresh lemon juice, or a pinch of paprika for added wow.

1 1/2 cups edamame (cooked according to package directions)
 juice of 1 lemon and {zest}
1/2 cup water
2 tablespoons tahini
2 cloves garlic, smashed
1/2 teaspoon salt
1 teaspoon cumin
1/4 teaspoon coriander
1/4 cup chopped {parsley}
2 tablespoons olive oil
Combine edamame, lemon juice, lemon zest, water, tahini, garlic, salt, cumin, coriander, and parsley in a food processor and purée until smooth. With the motor running, add the olive oil and continue puréeing until the oil is incorporated and the hummus is smooth. Taste and adjust seasonings as necessary. Thin with a bit of water if necessary.

Serve on toasted pita crisps or with all-natural whole-grain crackers.
