St. Paddy's Day Olive-Cheese Cookies
This recipe makes 2 dozen 'cocktail-cookies,' so let's have a dinner party -- it's St. Paddy's Day -- whether you are Irish or not!
Ingredients
6 tablespoons softened butter
1 1/3 cups grated Cheddar cheese
1 1/2 teaspoons parsley flakes
1/8 teaspoon onion powder
dash cayenne
2/3 cup flour
24 pimento-stuffed green olives

Directions
Preheat oven to 400 degrees.
Cream together softened butter and Cheddar cheese until smooth and blended. Add in the spices (parsley flakes, onion powder, and cayenne) to blend. Gradually add and mix in the flour until a smooth 'short dough' is formed. Blend well but don't over work dough.
Drop by teaspoonfuls onto un-greased cookie sheet. Press an olive into center of each 'cookie'.
Bake for 15 to 20 minutes. Serve warm, right from the oven.
