Jerked Chicken

2 teaspoons ground {cinnamon}
2 teaspoons ground {allspice}
1 teaspoon ground {nutmeg}
2 teaspoons ground {black pepper}
8  scallions, minced
2 tablespoons vegetable oil
1/2 cup Meyer's rum
2  chickens, quartered
Preheat the oven to 300 degrees F.

Combine the seasonings and the scallions; add the oil, and stir into the rum. Pour over the chicken.

Bake, basting frequently, for 1 1/4 hours, or until juices run clear.
