Ginger-Lime Dipping Sauce

This light and refreshing sauce is ideal with scallion pancakes. It can also be used to dress a salad.

1  scallion, finely chopped
1 tablespoon peeled and minced fresh ginger
1 teaspoon minced {garlic}
1/2 cup tamari or other soy sauce
1/4 cup fresh lime juice
1 tablespoon rice vinegar
2 tablespoons toasted sesame oil
1/2 teaspoon red pepper flakes
1 teaspoon {sugar} or natural sweetener
In a small bowl, combine the scallion, ginger, and garlic. Stir in the tamari, lime juice, vinegar, sesame oil, red pepper flakes, and sugar. Blend well.

Cover tightly and refrigerate until ready to use. This sauce will keep for several days, but the flavors will intensify the longer it is kept.
