Vegetable Breaded Chicken
Think it's difficult getting the kids to eat their vegetables? They won’t even know veggies are in this mix! This recipe can be made ahead of time.
Ingredients
1 cup Frontier Hearty Stew Soup Vegetables
3/4 cup organic bread or cracker crumbs
1/2 teaspoon salt
1/4 teaspoon organic black pepper
2 pounds chicken breasts
3 or 4 egg whites

Directions
Grind Soup Vegetables in a blender or coffee grinder. Add bread crumbs. Add salt and pepper (or leave out and season to taste at end). Place in shallow bowl.
Preheat oven to 375 degrees.
Beat 3 or 4 egg whites in a shallow bowl. Wash chicken breasts in the egg mix, then transfer to the breading.
Work the breading with your hands to get good coverage and gently place in a well-greased 3-quart casserole dish. Repeat with all the chicken and place in oven. Cook until completely done (30 to 40 minutes).
