Fish Patties
These taste much better than commercial fish cakes. You may use any new kind of fresh or saltwater fish. These are great with a simple potato salad or coleslaw. You may wish to put them on a bun with mayonnaise and pickles.
Ingredients
1 carrot, sliced
1 bay leaf
1 red pepper, finely diced
{salt}, to taste
2 pounds fish, cleaned
1 onion, minced
2 cloves garlic, chopped
{pepper}, to taste
1 1/2 teaspoons paprika
1/2 teaspoon dried {thyme}
1 tablespoon parsley, chopped
4 eggs, beaten
cooking oil for frying

Directions
Place the carrots, bay leaf and red pepper in a large saucepan. Cover with salted water and simmer over medium heat until tender. Add fish and continue cooking until the fish is tender. Drain the water, remove the bay leaf and fish bones, and then mince the fish vegetables by hand or in a food processor.
Transfer to a mixing bowl. Add the onion, garlic, pepper, paprika, thyme, parsley, and eggs. Mix well and form patties.
Heat oil in a deep skillet over medium heat. Fry patties in oil until golden on both sides.
