Caramelized Onion Topping
This topping is a companion to the Majorcan Flat Bread.
We think it would also be delicious as a topping for quiche or frittatas.
Ingredients
Majorcan Flat Bread
1/4 cup olive oil
8 cups sliced onions (about 6 onions)
2 tablespoons chopped fresh thyme or rosemary
2 tablespoons honey (optional)
6 salt-packed anchovies, rinsed, filleted, and each fillet cut in half lengthwise
freshly ground {black pepper}
1/4 cup pine nuts, toasted
1/4 cup raisins, plumped in hot water and drained (optional)

Directions
In a large frying pan, heat the oil over medium heat. Add the onions and cook, stirring often, until golden and reduced in volume by almost half, about 30 minutes. Add the thyme and honey, if using, and cook, stirring often, for about 10 minutes longer to blend the flavors. Remove from the heat and let cool completely before using.
Spread the cooled onions on the prepared crust. Top with the anchovies, and sprinkle with the pepper, pine nuts, and raisins, if using. Bake as directed.
