Flaming Bananas with Orange Zabaglione

4  egg yolks
1/4 cup sugar
1/4 teaspoon salt
6 tablespoons orange juice
1/4 teaspoon vanilla
6  ripe but firm bananas
1/3 cup warm brandy
Make zabaglione: In a small mixing bowl, beat egg yolks until thick and lemon-colored. Beat in sugar, salt, orange juice, and vanilla. Turn into top part of double boiler. Cook over hot water, beating constantly, until thickened (about 5 minutes).

Place unpeeled bananas in a single layer on greased heat-proof serving platter. Bake in a very hot oven (450°) for 10 minutes or until peels are black. Working quickly with knife and fork (the bananas must be served hot!), remove peels from bananas. Light heated brandy in a ladle, and pour, flaming, over bananas. Baste flaming brandy over bananas until flame dies.

To serve, gently lift bananas onto individual warm dessert plates. Pass warm zabaglione for guests to spoon onto hot bananas.
