Lentil Burgers
Ingredients
1 cup cooked {lentils}
1/2 cup cooked brown rice
1/2 small onion, diced
1 baby carrot, minced
1 egg
1/2 teaspoon sweet {paprika}
{salt}, to taste
ground {black pepper}, to taste
2 tablespoons vegetable oil

Directions
In a large bowl, mix the lentils, rice, onion, carrot, egg, paprika, salt, and pepper until thoroughly combined. The mixture should loosely hold together.
In a large skillet, heat the oil over medium heat. Use a 1/2-cup measure or large spoon to scoop six 1/2-cup portions of the lentil mixture into the hot skillet. Cook for 5-10 minutes or until set and golden brown on both sides.
Serve like hamburgers on buns or cut into small pieces.
