Spinach with Peanut Sauce

Combining spinach with a creamy sauce is a universally popular way to enjoy these iron-rich greens -- from American creamed spinach to Japanese gomai, a cooked spinach salad that is coated with a ground sesame seed sauce and served at room temperature.

1 pound fresh spinach, well washed
3/4 cup unsweetened coconut milk
3 tablespoons peanut butter
1 tablespoon peanut oil
1 teaspoon grated fresh ginger
1/2 teaspoon ground {cumin}
1/8 teaspoon ground or freshly grated {nutmeg}
 freshly ground {black pepper}
Steam the spinach over boiling water until tender, 2 to 3 minutes. Press any liquid from the spinach and chop it well. Set aside.

In a small bowl, combine the coconut milk and peanut butter until blended. Set aside.

Heat the oil in a large skillet over medium heat. Add the ginger, cumin, and nutmeg and cook until fragrant, about 30 seconds.

Stir in the reserved spinach, the peanut butter mixture, and salt and pepper to taste. Simmer, stirring frequently, until hot and creamy, about 5 to 7 minutes. Serve hot.
