Lemon-Braised Tofu-Hummus Wraps
Soft tortillas, crisp romaine, and creamy tofu are the perfect complement for the flavorful hummus. The Green Onion Hummus with Lime is especially good in this sandwich, but regular hummus would be delicious as well.
Ingredients
2 tablespoons extra-virgin olive oil
1 pound extra-firm tofu, cut into 1/4-inch strips
1/4 teaspoon lemon pepper seasoning
{salt} to taste
juice of 2 lemons
4 large flour tortillas
1/2 cup Green Onion Hummus with Lime or 1/2 cup regular hummus
2 cups chopped romaine lettuce
1 pound extra-firm tofu, cut into 1/4-inch strips
1/4 teaspoon lemon pepper seasoning
{salt} to taste

Directions
Heat the oil in a large skillet over medium-high heat. Add the tofu and the lemon pepper seasoning and season with salt. Cook, stirring frequently, until golden brown, about 5 minutes each side. Drizzle the lemon juice onto the tofu, stirring to coat. Transfer to a plate to cool.
To fill the wraps, spread the hummus on the tortillas, top with the tofu and romaine, and roll up. Cut in half to serve.
To make these sandwiches at the speed of light, buy a container of prepared hummus and a package of baked lemon-pepper tofu.
