Scrambled Tofu with Soy Sausage and Peppers
For added zing, serve with hot pepper sauce or salsa.
Ingredients
1 tablespoon safflower oil
1 small onion, chopped
1/2 cup chopped green or red bell pepper
1/2 cup chopped soy sausage
1/8 teaspoon ground {fennel seed}
pinch {cayenne} (optional)
1 pound soft tofu, patted dry and crumbled
1/8 teaspoon turmeric
1/2 teaspoon {salt}, or less, to taste
1/8 teaspoon freshly ground {pepper}

Directions
Heat the oil in a large skillet over medium heat, add the onion and bell pepper, and sauté until softened, about 5 minutes. Add the soy sausage, fennel seed, and cayenne (if using), and cook until the sausage is browned. Stir in the tofu, turmeric, salt and pepper and cook for 5 minutes, stirring occasionally, until the liquid is absorbed and the tofu is heated through.
