Tofu-Tahini Sandwich Spread
A tasty sandwich spread that can be thinned with soy milk and used as a dip for crudites.
Ingredients
1/2 cup chopped celery
2 scallions, trimmed
2 cups firm silken tofu, drained and patted dry
1/2 cup tahini (sesame paste)
3 tablespoons fresh {lemon juice}
1 tablespoon Dijon mustard
2 tablespoons drained capers
1/2 cup fresh parsley
1 teaspoon paprika
1/2 teaspoon salt
1/8 teaspoon cayenne

Directions
Place the celery and scallions in a food processor and mince fine. Add the remaining ingredients and process until well combined.
Transfer the spread to a small bowl, and refrigerate covered for at least an hour before serving to allow flavors time to develop.
