Spiced Baked Garbanzo Beans

These spiced garbanzo beans make for a great fiber-packed snack and can be used on top of salads like croutons or added to grain or pasta dishes for extra flavor and texture.

2 cans (15 ounces each) garbanzo beans, drained and rinsed
2 tablespoons curry powder
1 tablespoon toasted sesame oil
1 tablespoon ground {cumin}
1 teaspoon ground {ginger}
1 teaspoon sea salt
Preheat the oven to 400°. Line a large cookie sheet with parchment paper.

Combine garbanzo beans, curry powder, toasted sesame oil, cumin, ginger, and salt in a medium bowl, and stir well to evenly coat garbanzo beans.

Transfer garbanzo beans to the prepared cookie sheet, spread them into a single layer, and bake for 20 minutes. Remove from the oven. Stir garbanzo beans, spread them into a single layer again, and bake for 20 to 25 more minutes or until golden brown and crunchy. Taste and add additional seasonings as desired. Serve at room temperature.

Store garbanzo beans in an airtight container at room temperature.
