Grilled Red Catfish

A tangy and sweet new way to grill fish

1 pound catfish fillets
2  Roma tomatoes, sliced
1 teaspoon Frontier Himalayan Pink Salt
1/2 teaspoon dried {peppermint leaves}
1 1/2 teaspoons paprika
2 teaspoons lemon juice
Lightly grease grill.

Grill catfish on one side for 3 to 5 minutes. Carefully flip onto other side.

Layer sliced Roma tomatoes along fillet. Sprinkle tomatoes with salt, peppermint, paprika and then lemon juice. Cook 5 to 7 minutes until fish is flaky.

Fish can be broiled instead of grilled.

Use sliced red peppers instead of tomatoes.
