Curried Cornbread Muffins

Ingredients
1/4 cup honey
2  eggs
1/2 cup oil
1/2 cup soy milk
1 cup whole wheat flour
3/4 cup unbleached white flour
1 cup cornmeal
4 teaspoons baking powder
1/4 cup non-instant dry milk powder
1 1/2 tablespoons curry powder
1 cup water
Directions
Preheat oven to 350 degrees F.

Beat the honey and eggs together until blended. Add oil and soy milk and stir well. Add remaining ingredients and mix only enough to moisten; do not over mix.

Turn batter into oiled muffin tins. Bake for 15 minutes.
