Eggnog Cream Pie

Ingredients
2 tablespoons sugar
3 tablespoons cornstarch
6 {Organic Valley Eggs}, yolks only
3 cups {Organic Valley Eggnog}, divided
2 teaspoons Simply Organic Vanilla Extract
1 graham cracker pie shell (8 inch)

Directions
Place the sugar and cornstarch in a 3-quart heavy saucepan and whisk together.
In a small bowl, whisk egg yolks with 1/4 cup eggnog. Add the eggnog mixture to the dry ingredients in the saucepan and whisk together. Add remaining 2 3/4 cups of eggnog to the saucepan and whisk well. Cook on medium high heat until the mixture thickens, stirring constantly.
Remove from heat and add vanilla; whisk well. Pour into the graham cracker pie shell. Refrigerate 4 hours or more to set.
