Indian Rice and Peanuts
Ingredients
4 tablespoons oil or butter, divided or 2 tablespoons butter
1 onion, finely chopped
2 cups brown rice
1/4 teaspoon cloves
1/2 teaspoon cinnamon
1/4 teaspoon cardamom seeds
5 cups soup stock
1 cup peanuts
2 cups green peas

Directions
Sauté 2 tablespoons oil and onion in a large pot for 5 minutes. Add the brown rice and stir until browned, 3 to 5 minutes. Add spices and stock. Simmer until rice is tender and liquid is absorbed, 30 to 40 minutes.
In separate pan, sauté the peanuts and green peas in 2 tablespoons oil or butter for 3 to 5 minutes. Mix the peanut mixture into the rice mixture. Serve.
