Tex-Mex Casserole
Ingredients
1 package Frontier Tex-Mex blend
1 1/4 cups boiling water
2 cups cooked {lentils}
1 pound tofu
3 tablespoons oil
1 1/2 cups grated mozarella cheese or 1 1/2 cups grated cheddar cheese

1 pound tofu
3 tablespoons oil
1 1/2 cups grated mozarella cheese or 1 1/2 cups grated cheddar cheese
Directions
Stir Frontier Tex-Mex mix into boiling water. Add cooked lentils.
Slice tofu length-wise into 1/8 inch slices. Brown both sides in skillet with oil.
Place 1/2 of the tofu slices in an eight-inch-square casserole dish. Cover with 1/2 of the lentil mixture, top with 1/2 of the cheese. Repeat with remaining ingredients.
Bake at 350 degrees until bubbly (approximately 20 minutes).
