Gourmet Mini Pizzas

Onion and Herb Pizza Dough
1 1/2 teaspoons baker's yeast
1 teaspoon Frontier Organic Cane Sugar
1 cup warm (110°F) water
1 tablespoon olive oil
1 tablespoon Frontier Salt-Free Onion & Herb Seasoning
1 teaspoon Frontier Italian Seasoning
2 1/2 cups all-purpose flour
1/4 teaspoon Frontier Sea Salt
Sun-Dried Tomato Pizza Sauce
1/4 cup plus 1½ teaspoons canned oil-packed sun-dried tomatoes, drained
1 tablespoon 1 plus 1 ½ teaspoons sun-dried tomato oil (drained from jar of sun-dried tomatoes)
3 tablespoons water
1 tablespoon Frontier Salt-Free Onion & Herb Seasoning
1 tablespoon Frontier Italian Seasoning
3 ounces mushrooms, thinly sliced and divided
1/2 cup fresh baby spinach, divided
4 ounces soft goat cheese, crumbled and divided
1/2 cup shredded Parmesan cheese, divided
Onion and Herb Pizza Dough:
1. Preheat the oven to 450 degrees.
2. In a large bowl, whisk together yeast, cane sugar and warm water until yeast and sugar are dissolved. Let stand for 10 minutes, until the mixture is creamy.
3. In a small bowl, mix the olive oil, Onion & Herb Seasoning and Italian Seasoning. Stir the herbed oil, flour and salt into the yeast mixture until smooth. Let rest for 20 minutes, punching the dough down occasionally.

Sun-Dried Tomato Pizza Sauce:
1. In a food processor, blend sun-dried tomatoes, sun-dried tomato oil, water, Onion & Herb Seasoning and Italian Seasoning until well blended.

1. On a floured surface, use a knife to cut the dough into six equal pieces. Then use a rolling pin to roll out the dough into six uniformly-sized rounds, and place the rounds on a large, greased baking sheet.
2. Top each dough round with 1 tablespoon pizza sauce, using the back of a spoon to evenly spread the sauce. Then distribute the mushrooms and spinach evenly among the pizzas. Sprinkle each pizza with goat cheese and Parmesan cheese.
3. Bake the pizzas at 450 degrees for 10 to 15 minutes, or until the crust is golden and the cheese is melted.
