Guacamole Grilled Cheese

Grilled cheese with the zesty, smoky, fresh flavors of guacamole.

2 slices your favorite bread (I use organic multigrain.)
2 ounces {Organic Valley Pasture Butter}, softened
1/4 teaspoon Simply Organic Cayenne Pepper
1/4 teaspoon Simply Organic Garlic Powder
1/4 teaspoon Simply Organic Cumin Ground
1/4 teaspoon Simply Organic Coriander Ground
1/4 teaspoon Simply Organic Chipotle Powder
2 slices Organic Valley American Cheese Singles
2 slices of the best tomato you can find (I use organic Marvel Stripe.)
 {salt} to taste
 {Simply Organic Ground Pepper} to taste
 Simply Organic Cilantro
1/4 teaspoon Simply Organic Parsley
1/2  ripe avocado, sliced
In a small bowl, combine softened butter with cayenne, garlic, cumin, coriander, and chipotle to make a compound butter. Spread butter on one side of both slices of bread.

Put one slice of cheese on each unbuttered side of bread. Top one side with tomato slices, season with salt, pepper, cilantro and parsley. Top with avocado slices and repeat seasoning. Top with second slice of cheese and bread.

Carefully transfer sandwich to panini press or grill pan and cook to desired crispiness. (I like to get the buttered bread just golden and cheese just melted, so the tomato and avocado don't get too squishy.) Dig in and enjoy.
