Italian Cheese Pie

1  9- inch pie shell
1 1/2 pounds ricotta cheese
1/4 cup chopped roasted almonds
4  eggs
1/4 cup honey
1 teaspoon vanilla extract
1  ground cinnamon
Preheat oven to 375 degrees.

Put ricotta through a sieve into a large bowl. Add almonds. Set aside.

Beat eggs and honey until foamy. Add vanilla. Blend with ricotta mixture until smooth. Pour mixture into pie crust.

Bake for about 45 minutes, or until filling is firm. Cool on wire rack. Decorate with cinnamon just before serving.
