Maple Tapioca Pudding

2/3 cup {Frontier Pearl Tapioca} (soaked for 2 hours, then drained)
1/2 cup Frontier Maple Syrup Granules
1/4 teaspoon Frontier Sea Salt
3 3/4 cups whole milk
1 tablespoon Frontier Arrowroot Powder
1 teaspoon Frontier Organic Vanilla Extract
1/2 cup shredded coconut
1/2 cup walnuts
1. Combine the first four ingredients in a double boiler. Cook while stirring over rapidly boiling water for 7 minutes.
2. Remove one cup of the hot liquid and blend with the arrowroot powder. Return liquid to the pot and stir. Cook 5 minutes or until tapioca is clear.
3. Remove from heat. Stir in vanilla, coconut and walnuts.
