Tapioca Pudding

2/3 cup {pearl tapioca} (soaked for 2 hours, then drained)
1/2 cup maple syrup
1/4 teaspoon salt
3 3/4 cups whole milk
1 tablespoon arrowroot
1 teaspoon vanilla extract
1/2 cup coconut
1/2 cup walnuts
Combine the first four ingredients in a double boiler. Cook while stirring over rapidly boiling water for 7 minutes.

Remove one cup of the hot liquid and blend with the arrowroot powder. Return liquid to the pot and stir. Cook 5 minutes or until tapioca is clear.

Remove from heat. Stir in vanilla, coconut, and walnuts.
