Potato Soup

1 cup dried potatoes
1/4 cup dried carrots
1/4 cup dried celery
1/2 cup onion slices
3 tablespoons oil
7 cups water
2 tablespoons broth powder
1 teaspoon sea salt
1 tablespoon parsley
1 tablespoon tarragon
Sauté onions in oil until translucent. Add vegetables and all other ingredients and simmer until all vegetables are tender, about 1 hour.
