Cajun Rice
Ingredients
1 cup brown rice, raw
1 teaspoon {garlic flakes}, rehydrated
3 tablespoons oil
3 cups water
1/4 cup {onion flakes}, rehydrated
1 green pepper, chopped
1 {dried red jalapeno pepper}, rehydrated
1 cup mushrooms, sliced
2 tomatoes, chopped
1/4 teaspoon allspice
1/2 cup grated cheese
1 teaspoon {garlic flakes}, rehydrated

Directions
In a heavy skillet, sauté the rice and garlic flakes in 1 tablespoon of oil. Pour boiling water into the skillet and cover. Simmer 30 minutes.
Meanwhile, in another skillet, sauté the onion flakes, peppers, and mushrooms in the remaining oil. Add the cooked vegetables to the rice. Add tomatoes and allspice and stir.
Top with grated cheese and cover until melted.
