Tortilla Tower

6  tortilla shells
1 cup mushrooms, sliced
1  small onion, sliced
2 tablespoons oil
2 cups pinto beans, cooked
1 cup tomato sauce
1 teaspoon Frontier Mexican Seasoning
1 cup sour cream
1/2 cup black olives, sliced
2 cups lettuce, shredded
2 cups cheese, grated
1/2 cup hot sauce, optional
1  red bell pepper, sliced
1  green bell pepper, sliced
2  tomatoes, sliced
1. Lightly toast tortillas in ungreased skillet and set aside.
2. To prepare bean filling: Sauté mushrooms and onions in oil. Combine with beans, tomato sauce and Mexican Seasoning. Combine sour cream and olives in a separate bowl.
3. Layer the tortilla tower as follows: shell – lettuce – shell – beans – shell – cheese – shell – sour cream and olives – shell. Top with hot sauce, sliced peppers and tomatoes.
