Bruschetta
Ingredients
1 loaf Italian or French bread
1 teaspoon olive oil
1 1/2 teaspoons garlic powder
1 medium onion, chopped
2 cups sliced mushrooms
2 medium tomatoes, sliced thin
1 to 2 tablespoons Frontier Italian Seasoning
1 teaspoon Parmesan cheese

Directions
Preheat oven to 350 degrees.
Slice bread on diagonal in 1-inch thick slices. Place on cookie sheet. Brush with a little oil and sprinkle with garlic powder. Bake until bread is toasted.
While bread is toasting, cook onion and mushrooms in a non-stick skillet, adding 1 teaspoon oil, if desired. (Toast can be made ahead and stored in a airtight container.)
To serve: spoon some of the onion mixture onto each toasted slice. Top with a tomato slice and sprinkle with seasoning and Parmesan cheese. Brown under a broiler or in a toaster oven.
