Soup de Provence
Delicious on its own when you want to eat light, this simple soup also makes a great base for heartier fare like French onion soup.
Ingredients
2 stalk celery, chopped
2 clove garlic, minced or 2 teaspoons garlic powder
1 small onion (or eqivalent scallions), sliced
4 tablespoons butter
1 tablespoon cumin
4 tablespoons Frontier Herbes de Provence
2 tablespoons chicken-flavored broth powder
8 cups water
1 mesh soup bag or teaball
1/2 teaspoon tamari
{lemon pepper} for seasoning

Directions
Sauté celery, garlic and onion in soup pan with butter and cumin. Add water and chicken-flavored broth powder. Put Herbes de Provence in mesh bag or teaball and place in soup. Add tamari. Cover and simmer for 20 minutes, stirring gently now and then. Season to taste with lemon pepper.
