Pizza Zucchini

1 teaspoon oil (optional in a non-stick pan)
1 cup chopped onion
1 cup chopped sweet red pepper or  chopped green pepper
1 cup sliced mushrooms
3 to 4 cups sliced zucchini
1 to 2 pounds fresh tomatoes, chopped, or 1-2 cups salt-free tomato sauce
1 to 2 tablespoons Frontier Pizza Seasoning
 mozzarella cheese (optional)
 Parmesan cheese (optional)
4 to 6  pita bread pockets
In a skillet, heat oil and cook onion until tender. Add pepper and mushrooms and sauté for 2 minutes. Add zucchini and cook until tender, add tomatoes (or sauce) and Pizza Seasoning. Stir and heat thoroughly. Top with a little mozzarella and Parmesan cheese if you like.

Spoon mixture into pita bread.
